Pre heat the oven to 200*C
Grease a push bottom or springform cake tin and line with greaseproof paper
Sift flour and salt into large mixing bowl
Add cubed butter and rub into flour with fingertips until resembling fine breadcrumbs.
Add caster sugar and crushed Amaretti biscuits, mixing thoroughly
Press mixture into the base of cake tin and smooth with the back of a spoon until mixture is compact and evenly spread.
Peel, core and finely slice apples
Fan slices in overlapping layers around the outside edge of the crumb base tucking the last one under the first when you complete the circle
Form a second smaller circle of overlapping apple slices to fill in the gap in the centre of the tart so that you have two concentric circles
Sprinkle 2 teaspoons caster sugar over the top of the apples
Combine the melted butter and cinnamon and brush gently over the top of the apples taking care not to dislodge the pattern
Bake in the centre of the oven for 35 minutes
Let the tart cool in the tin to let the juices sink into the base before turning out and serving with cream or ice cream
