adapted from Fix it with Food by Michael Simon, page 193. Sub any fruit that is currently in season. Peaches and blueberries work really well. If using peaches, no need to peel.
Preheat oven to 350F.
FOR THE FILLING: In a large bowl, toss together the apples, dates, cherries, lemon juice, and salt. Dump into a deep dish 9" pie plate or 9x9 baking dish. Dot with the 6 pieces of butter.
FOR THE TOPPING: In a large bowl, stir together the oats, Alpen (or all oats), flour cinnamon, and salt. Drizzle in the melted butter and maple syrup and stir well to combine and ensure all of the oats have been saturated.
Sprinkle the topping evenly over the surface of the fruit mixture and bake, uncovered, until the applease are soft and the topping is golden brown and crisp, about 45 minutes. Serve hot or at room temperature. Store covered, unrefrigerated for up to 2 days, or in fridge for up to 4 days. You can warm in microwave if desired.
