Mix dry ingredients in a bowl - set aside.
Combine milk, egg, applesauce & maple syrup in another bowl.
Incorporate the liquid ingredients with the dry ingredients. Mix well.
Add apples to the batter.
Scoop the batter into a muffin pan - filling each compartment 2/3 full.
Bake for 25-30min (until inserted toothpick comes out clean)
