Salsa - Dice all the fruit, and mix all ingredients, through the apple jelly together. After blending thoroughly cover and refrigerate until ready to serve.
Chips - Wet the tortilla shells lightly with water. Sprinkle (dredge) well with cinnamon/sugar mixture. Cut each tortilla in 8 wedge pieces. Spread on cookie sheet with parchment paper and bake at in a convection oven at 375 degrees for 8 minutes. They will be soft when they are first removed from the oven and will crisp up as they cool.
Note, the Salsa is better if you make it a day ahead and let the flavors meld.
Serve with the fruit salsa.
