Preheat oven 375 degrees, position rack in the lower 1/3 of oven
Grease ramekins, parchment on a cookie tray
Melt butter, add vanilla
Mix almond flour, 2/3 cup monkruit, and salt, add melted butter and vanilla
Mix until crumbly
Mix apples, berries
Mix 1 cup monkfruit, arrowroot powder, and cinnamon - add to fruit mixture
Divide evenly into ramekins, and top with crumble
Place ramekins on cookie tray
Bake 45 mins, checking for toasting (cover loosely with foil once the toast level is good)
Cool one hour on a rack before serving
Serve with cinnamon or vanilla ice cream (not in the nutrition calculation).
