Combine oil, eggs, sugar & vanilla. Sift dry ingredients. Add dry ingredients to oil mixture gradually. Stir in apples and pecans. Pour into 2 loaf pans, greased & lined with parchment paper. Sprinkle loaves with sugar. Bake at 350 for 70 minutes.
Granny Smith apples add the perfect balance of tart to the sweet. I double the recipe and bake in 3 large loaf pans.
