From Mrs. Tolboe's class with my additions.
Mix 5 tablespoons sugar and 2 teaspoons of cinnamon in gallon plastic bag.
Peel, quarter and slice apples, add to bag, shake and allow to macerate. (Do not add resulting liquid to cake)
Mix sugar, oil, orange juice and vanilla.
Add eggs one at a time.
Mix flour, 1 teaspoon cinnamon, nutmeg, cardamom, baking powder and salt.
Add dry ingredients to wet mix.
Pour 1/3 batter into greased bundt pan.
Add and arrange 1/2 of apples.
Pour in next 1/3 of batter and tap out bubbles.
Add remaining apples.
Add last of batter and be sure to cover all of apples to prevent burning. Tap again.
Bake at 350 degrees for 55 min - 1 hr or until brown with clean knife test.
Let cake cool 10 min before releasing from bundt pan. Let cake cool completely.
Make frosting by mixing ginger and powdered sugar with maple syrup. Add syrup 1 tablespoon at a time. More or less syrup may be added to obtain desired consistency. Drizzle over cake.
Ice will look prettier when the cake is cool; however, people really liked the cake still warm from the oven.
