Blend first 4 ingredients and Mix the next 6 ingredients. Combine both mixtures together and add diced apples, raisins and walnuts. (I usually leave out the walnuts due to allergies)
The mixture may seem rather dry but that is normal. Place mixture in a greased bundt pan and bake for 1 hour and 15 minutes in a preheated 325* oven. Test for doneness by inserting a knife into centre. Should come out clean. Let stand for 20 minutes and then turn out onto cake plate.
Serve with ice cream or whip cream. A cream cheese icing I think would be great too but I have yet to try that!!
