Make a double batch and freeze some
Preheat oven to 425 degrees.
In a bowl, mix flour, baking powder, sugar, and salt. Cut in butter until
mixture resembles coarse crumbs. Stir in cider until just moistened. Turn
onto a floured surface and knead 8-10 times. Roll out to 1/2-inch
thickness and cut with a 2-1/2 inch cutter.
Place on ungreased baking sheets. Sprinkle with cinnamon. Pierce top of
biscuits with a fork.
Bake at 425 degrees for 12-14 minutes or until golden brown. Serve warm.
Add a glaze of confectioner's sugar and cider.
