Preheat the oven to moderately hot 200?C (400F/ Gas 6)
Place the pie apples in a bowl and break up with a knife.
Sift the flour & cinnamon in to a larg bowl. Add the brown sugar stir together and make a well in the center.
Place the milk ,eggs, vanilla essece and the melted buter in a jug, whisk together and pour into the well. Add the apples, then fold gently until just combined the batter should be lumpy.
Divide the mixture evenly among the muffin holes. Bake for 20-25 minutes, or until the muffin come away slightly from the sides of the tin. Cool for 5 minutes, then transfer to a wire rack.
this will make 48 Mini muffin holes. 12 regular or 6 texas muffins
