Not the prettiest muffin but appley & cinnamony - yummy.
Preheat the oven to 160 degrees Celsius.
Cut the apples into 1/4 inch dice. Combine the apples & brown sugar in a bowl and set aside. Sift the dry ingredients, add the wet ingredients & gently fold through the apples being careful not to overmix.
Drop large spoonfuls into preprapared muffin tins & bake for 30 minutes.
