Can't get any easier! Delicious warm or room temp, with ice cream, whipped cream or plain.
Preheat oven to 350F.
Line 8 or 9 inch square pan with parchment paper or spray generously with nonstick cooking spray. Press 2/3 of the cookie dough evenly in pan. Stir together cinnamon and sugar. Sprinkle 2/3 of the cinnamon sugar mix over the dough. Spread pie filling evenly on top. Crumble the rest of the cookie dough and lay on top of pie filling. Sprinkle rest of cinnamon sugar over all.
Bake 35 to 40 minutes or until bottom layer is set. Cool on rack.
Going to try with peach or cherry pie filling next.
