Soft buttery crust, tangy fruit, crispy topping, and rich color make this dessert an exquisite choice for the holiday season.
• Set out the butter to soften, then peel and slice the apples. Place the apple slices in a lemon juice and water mixture of 1 part lemon juice to 3 parts water, and set aside.
• Preheat oven to 350 degrees. Combine first four dry ingredients in a mixing bowl. Add egg yolk to a small bowl and whisk in the cognac. Pour the egg and cognac over the dry ingredients, and then cut in 1 stick of of softened butter until the mixture is crumbly in texture. Add to an 11" tart pan and press into sides and bottom until crust is evenly distributed.
• Fill the bottom of the tart with the apples, and pour cranberries on top of the apples making sure that the cranberries are spread out over the top of the tart. Set aside.
• Mix together remaining ingredients until crumbly, and sprinkle over the top of the of tart. Bake the tart for approximately 40 minutes until the top is brown and you can see the juices bubbling around the edges of the tart. Remove and cool before serving.
