Preheat oven to 425.
Filling: Peel, core and thinly slice 5 to 6 apples. Place in large bowl, add 3/4 cup sugar (less if desired), 1/4 cup flour, cinnamon, nutmeg and dash of salt. Stir until well blended. Set aside.
Dough: In medium mixing bowl, using a fork, mix 2 cups flour, 1 teaspoon salt, and 3/4 cup shortening until well blended (crumb-like mixture). Add 1/2 cup very cold water and mix until mixture becomes a ball and doesn't stick to bowl. Place dough in a 9" deep dish pie plate. Spread dough with wet fingers to form bottom and side crust. Let sit for 5 minutes to set. In place of dough above, you can use an already prepared pie crust dough from the dairy case of your favorite store.
Topping: Mix 3/4 cup flour, 1/2 cup sugar and 5 tablespoons of butter with 2 knives (scissor-fashion). Mix ingredients until crumbly. Stir apple filling then place in pie crust, top with 2 tablespoons butter, then sprinkle crumb topping evenly over the top of apples.
Place in a 425 oven for 50 minutes. Reduce oven to 375 and continue to bake until golden brown. Juices should be thick and bubbling through topping.
