Slice the apples thin so that they may be spread out. Pour the lemon juice over the apples in a saucepan. Mix in the sugar, cornstarch, nutmeg and cinnamon. Add the apple juice (pre-heated) to the pan. Cook the mixture until it thickens. Remove from heat and cool.
