1/2 stick melted butter
1/4 cup light brown sugar
2 tab. finely chopped crystalized ginger
2 tab. currents or chopped raisins
1 large apple, peeled, cored, sliced thin
1 tab. lemon juice
1/2 cup flour
1/2 tsp baking powder
1/4 tsp salt
1/2 tsp cinnamon
2 eggs
6 table. sugar
1/2 tsp vanilla
Melt butter in 8 inch round cake pan. Swirl. Sprinkle with brown sugar,
ginger, then currents. Toss apple with lemon and arrange over currants.
Sift flour, baking powder, salt and cinnamon. Beat Eggs and sugar and
vanilla for 3-5 minutes till thick and forms a ribbon. Fold in flour
mixture. Pour over apples and bake at 400 for 20-25 minutes till tester
comes out clean.
Run knife around pan edges. Invert onto serving platter.
