Combine oats and milk; let stand for 15 minutes. Sift the flour, sugar and baking powder into a bowl. Add any optional ingredients. Mix egg and oil in with oat mixture. Add apples to the liquid ingredients. Add dry ingredients all at once to liquid ingredients, stirring just to moistened. Fill greased muffin pans 2/3 full. Bake at 425F for 20-25 minutes.
