In a mixing bowl, beat egg slightly with a fork. Stir in milk. Add grated apple and melted butter. Sift next 5 ingredients together, then sift into mixing bowl and stir just enough to dampen flour. Batter will be lumpy - do not over mix.
Mix topping ingredients together; sprinkle on top of muffins before baking.
Bake at 400 degrees for 25-30 minutes.
