Beat eggs, apple juice, oil, and vanilla in bowl.
In a separate bowl, mix together flour, sugars, cinnamon, baking powder, and salt. Stir into wet ingredients til moistened. Mixture will be lumpy.
Stir in nuts, apples, and lemon juice.
Pour mixture into a greesed tube pan or into 2 loaf pans
If using loaf pans, sprinkle with cinnamon and sugar.
Bake at 325 degrees for 1 hour or until tooth pick comes out clean.
For Muffins: Bake at 400 degrees for 20 minutes or til tooth pick comes out clean. Remove from pan and place on cooling racks immediately.
