In a medium, whisk 1 1/4 cups flour, 3/4 cup sugar, 1/2 cup rolled oats, 2 teaspoons baking powder, 1/4 teaspoon cinnamon and 1/4 teaspoon salt. In a separate bowl, whisk 8 oz bottle vanilla flavored nutrition shake and 1 large egg. Stir into dry ingredients just until combined. Fold in 2/3 cup finely chopped apple. Divide batter evenly among prepared muffin cups. Top with streusel. Bake 20 minutes or until muffins spring back when touched lightly in center. Cool in pan 5 minutes. Transfer muffins to a wire rack; cool completely.
