Preheat Oven to 425F
Place a 9X13 ceramic or glass baking dish in oven to preheat for batter.
Prepare the batter -
In a blender or food processor, combine eggs, vanilla, and milk. Blend until consistent. In a medium bowl, whisk together flour, salt, and sugar. With blender running slowly spoon dry ingredients into batter.
Prepare apples -
Peel and core apples and cut into thin slices. In a large frying pan, melt butter over medium heat. Add apples and fry for 5 - 10 minutes until apples a tender. Add brown sugar and cinnamon to apples and continue to cook until combined.
Bake Apple pancake -
Removed preheated dish from oven. Pour apples and sauce into heated dish. Pour batter over apples. Return dish to oven and bake for 20 minutes.
