Prepare the the crust. In a food processor combine flour and sugar. Add butter and pulse a few seconds at a time until it is the size of peas. Add milk and egg and pulse until a ball begins to form. Shape into a disc with your hands. On a floured work surface, roll out pastry and line a 21 cm (8 inch) deep springform pan. Press firmly, prick the dough all over with a fork and chill the crust until firm.
In a saucepan, bring milk, vanilla bean and seeds to a boil. Remove from heat, cover and let infuse for 15 minutes. Remove the vanilla pod.
In a bowl, whisk sugar with cornstarch. Add egg yolks and slowly add the warm milk. Cook over low heat, stirring constantly with a wooden spoon or spatula, taking care to scrape the bottom of the pan, until mixture thickens. Remove from heat and cover with plastic wrap directly on cream and let cool in the refrigerator or over an ice water bath. Set aside.
Preheat the oven to 200 °C (400 °F). Core and peel the apples and working quickly, slice into thin slices. Brush them with lemon juice. Pour some laminated apples in the bottom and then pour cooled custard. Take the laminted apples and lay them in a decorative pattern over the custard, coming just up to the crust edge. Sprinkle with sugar and nuts.
Bake for about 40 to 45 minutes or until golden and custard is only slightly wobbly. Set the oven to broil and caramelize for about 5 minutes or until surface of custard is partially burnt. Remove from oven. Let cool and refrigerate for 6 hours.
