Suggest a better descriptionPreheat oven to 350 degrees. In a large bowl add chopped apples, blue cheese, butter, spices and salt.
Mix together and set aside. Place pie crust onto a floured surface and roll out thinly as if making a large pie. Cut out 1 1/2 inch circles with cookie cutter or glass and place into a greased mini-muffin pan you should be able to make 12-14 circles.
Gently push circles into muffin pan and form a cup. With a tablespoon gently fill the cups with your apple mixture.
Once they are all filled place into the oven for 20-25 minutes or until slightly golden. Remove from oven and let cool. Once cooled scoop out the tartlets onto your serving dish or wire rack. Top each tartlet with a dollop of honet cream (recipe below) and finish with a chive segment. Should be served room temperature.
****For Honey Cream topping:
1 cup organic whipping cream
3 Tbs local honey
****For garnish:
3-4 chives cut into 1 inch segments
****Easy Basic Pie Crust
2 cups organic unbleached all-purpose flour
2/3 cup canola oil
1/3 cup organic whole milk
1 tsp salt (optional)
In a large bowl add the flour and salt and mix well together. In medium bowl, add milk and oil and combine together. Slowly add the milk mixture into the flour mixture while mixing at a low speed. The mixture will be slightly sticky, form 2 dough balls. One can be used for the top of pie and one for the bottom or if the recipe only needs one pie crust simply place the remaining dough ball into a bag and refrigerate until needed for up to 2 weeks. Roll each dough ball out between wax paper, once thin enough add to pie pan and continue with pie recipe.
