This is like a coffee cake only lighter and fluffier, using biscuit mix and fruit (canned peaches and apples both work great, but try other variations).
Beat together egg, applesauce and milk in bowl. The original recipe called for 3 tablespoons salad oil instead of the applesauce. You can substitute a little oil back in if you don't have applesauce available. Add bisquick and sugar. Mix well. Coat 9X13 baking dish with cooking spray. Line the bottom with apple slices, saving some for the top. Turn batter into dish. Arrange apples on top of batter. Sprinkle with sugar and cinnamon. Dot with butter or margarine.
Bake at 375? for 35 minutes. Cooking times vary dramatically with this dish. It is done when a knife inserted in the middle comes out clean.
