Apple Pie Caramel with edible wrapper. For the wrapper, I use Petri dishes but you can use anything available.
For the "edible wrapper"
Place the water in a saucepan, add the glycerine and gelatin and set aside until softened. Heat the mix, stir constanly with a whisk to melt the gelatin.
Spread out 60 Petri dishes that are 9cm in diameter. Using a pipette deposit 6g of gelatin solution on each dish, swirling the liquid to coat the bottom evenly and tapping the dish to break any air bubble.
Leave in a warm place for 20-25 hours, or until completely dry and can be peeled off the dishes. place each wrapper between sheets of backing parchment and store in a dry place until needed.
For the apple pie caramel
Place the apple granules, yeast and cream in a pan and bring to a boil. Remove from the heat and whisk well to make sure all the yeast and apple granules have dissolved. Set aside.
Combine all the remaining ingredients in a heavy-based saucepan. Bring to the boil, stirring continuously, and cook until the mixture reaches 150C/300F. Remove from the heat and whisk in 1/3 of the cream mixture.
Return to a simmer very briefly, whisk in another 1/3 of the cream mixture off the heat, then briefly bring to a simmer for a second time. Whisk in the last of the cream mixture, again off the heat, and briefly simmer once more.
Quickly pour the caramel into a parchment-lined tray large enough to hold all the caramel to a depth of about 1cm. Leave to set for 6 hours, then turn out and chill.
To wrap the caramels
Cut the cooled caramel into a blocks measuring 1x1x3cm
Place each caramel on the edge of a edible wrapper and roll it up, twisting the ends. Use clean scissors to trim the ends neatly. Store the caramels in an airtight container.
