Good Apple Pie recipe. Serve warm with ice cream or a thick slice of cheddar cheese. Use a mixture of apples to balance sweet and tart, such as 2 c. golden delicious or gala, 2 c. granny Smith or Winesap, and 2 c. McIntosh or Northern Spy. (I used Granny Smith, Gala and Sonya Sweet). Don't cut apples too thin.
1. Roll half of pastry into 1/8" thickness on a lightly floured surface. Place in 9" pie plate; set aside.
2. Combine apple and lemon juice in a large bowl.
3. Combine sugar and next 4 ingredients, mixing well. Spoon over apple mixture, tossing gently.
4. Spoon filling mixture into pastry shell, and dot with butter.
5. Roll remaining pastry to 1/8" thickness; transfer to top of pie.
6. Trim off extra pastry along edges. Fold edges under and crimp.
7. Cut slits in top crust to allow steam to escape. Brush pastry lightly with beaten egg yolk. If desired, combine optional sugar and cinnamon and sprinkle on pie.
8. Cover edges of pastry with aluminum foil to prevent excessive browning. Bake at 450° for 15 minutes; reduce heat to 350° and bake an additional 50 minutes.
