Modified from AllRecipes: Apple Pie by Grandma Ople

Preheat oven to 425 F
Peel, core and slice apples and place into large bowl. Roll out bottom crust and place into pie plate. Refrigerate crust until ready to use.
Melt butter in saucepan. Stir in flour to form a paste. Add water, sugars, cinnamon and nutmeg and bring to a boil. Reduce heat and simmer to thicken slightly.
Remove from heat and stir in vanilla extract.
Pour sugar mixture over apples and stir to coat the slices. Layer apples into bottom crust and scrape any liquid remaining in bowl into the crust.
Cover with top crust (preferably lattice).
Place pie on baking sheet (to catch any liquid that may overflow) and bake for 15 minutes.
Reduce temperature to 350 F and bake for 35-40 minutes, or until apples are soft and crust is golden brown.
Allow to cool several hours before serving.
