This recipe is scaled to fit into a regular 9" aluminum pie pan.
Preheat oven to 425 degrees.
In a small mixing bowl, combine 1/3 c. sugar, 1 teaspoon cinnamon, nutmeg, flour, and salt. Place the thawed crust onto a 9" pie pan.
In a medium size mixing bowl, add the apples. Add the sugar/cinnamon mixture; mix well. Pour filling into the deep dish pie crust, leaving about a 1/4-inch space between the filling and the top of the crust. Place top crust over filling. Trim, tuck, and seal edges. Poke 4-5 vent holes in the top with a fork. Sprinkle remaining sugar and cinnamon over the top crust. Place pie pan on a baking/cookie sheet pan.
Place a crust protector over and around the crust or use aluminum foil wrapped around the pie crust and folded over to protect the crust from over browning.
Place baking/cookie sheet pan with the pie in the oven. Bake for 15 minutes at 425 degrees. Reduce heat to 350 degrees and bake for another 50 minutes or until the crust is golden brown. Cool on a wire rack.
