Apples - Peel and slice apples, blend in cinnamon, lemon, brown sugar and flour. Only use as much sugar as absolutely necessary - too much sugar breaks down the apples too much. Add to bottom shell. Dot 1 tblsp. butter over mix. Add top pie shell. Brush top shell with egg yolk and milk mixture.
Bake 425F - 15 min; then reduce to 400? for 15 min; then reduce to 325? for 20 min.
