Preheat over to 425. Line pan with pastry. Pare, quarter, core and slice apples in thin slices. Combine sugar (amount depends on sourness of apples) and spice. Sprinkle one tablespoon sugar and spice mixture over bottom crust, dot over it one teaspoon butter. Put in apples, spreading them in evenly. Sprinkle with remaining sugar and spice. Dot over with remaining butter, Cover with the top crust. Bake in a hot oven, 425 for 15 minutes, then reduce it to 350 and bake for 45 minutes.
