1. Place roast in a shallow roasting pan, rub with garlic halves, salt and pepper. Top with herbs. Arrange apple wedges, onions and slice garlic around roast. dot with butter. Combine 1 cup apple cider adn soy sauce and pour over top.
2. Bake uncovered at 350 for 1 1/4-1 1/2 hours or until 160 degrees internal. Baste occassionally with pan juices. Remove roast, apples and onions to a serving platter, let rest 10 minutes before slicing.
3. Meanwhile, skim fat from pan juices, transfer juices to a small pan. Add remaining cider. Bring to a boil. Remover from heat, whisk in sour cream until smooth. Serve with pork roast.
