Apple Raisin Spicy Rum Cake. You have to try it to believe it! This dessert won me best Apple Dessert at the office.
Syrup
- Mix 1.5 cups of water with 1 cup of sugar, heat on stove at medium till sugar is dissolved. Remove and add 2/3 cup of spiced rum and 1 teaspoon of vanilla extract. Let cool down
Cake
- leave eggs at room temperature while you prepare the cake mixture.
- cut 2 apples into small pieces, add raisins, pour 1/3 cup of spiced rum over the fruits and reserve.
- Saucepan, mix butter and 1 cup sugar, slowly heat (low) and whip until it become light and creamy.
- Put this mixture in a mixing bowl, add eggs one at a time while continuing to whip the mixture.
- Add flour slowly, a little at a time, while continuing to whip. Add pinch of salt and lemon juice.
- Incorporate fruits slowly while mixing it slowly manually.
- Stick it in the oven at 350, until done.
Final step
-remove cake from oven, unstick from pan, but do not remove, and pour Syrup mixture over cake and wait till fully absorbed before paradise!
