Bring to a light boil over medium-high heat.
Cover, reduce heat and simmer gently for 20 minutes or until rice is cooked but still firm.
Increase heat slightly and stir in apple pulp, apple juice and honey.
Simmer gently for 10 minutes or until liquid is slightly reduced, rice is tender and mixture is thick.
Remove from heat and stir in yogurt, ginger, cinnamon and nutmeg.
