This is a really good cake, great for company or a large crowd. Since the scotch is not heated in the glaze, you might want to serve this only to adults.
*** Marinade ***
Core and cube apples (do not peel). Add sugar, raisins, cinnamon and scotch. Mix well and place plastic wrap over (touching) apples. Place in refrigerator for about an hour, or while making the cake mix.
*** Cake ***
Grease a springform pan. Cut out wax paper for the bottom and sides of pan. Place bottom then sides, then grease the paper as well. Preheat oven to 300?. Cream butter and sugar together. Beat in vanilla and scotch. Beat in eggs, one at a time. Add baking soda, and spices to flour. Beat flour mixture and milk into batter, alternating, with milk going in last. Add marinated apple mixture and pour into prepared pan. Bake for about an hour and fifteen minutes or until a tooth pick comes out clean. Rest on a rack in the pan for 10 minutes, then remove sides of pan and cool on rack for about a half an hour.
*** Glaze ***
Melt jelly with scotch, being careful of flameups. Brush on warm cake. Transfer to bottom of pan with cake to serving dish.
You can boil the scotch before using it for the glaze to remove the alcohol, but taste may be affected.
