toss the apples with the lemon juice
tray the apples up, (single layer only) and put in the frezzer for at least 1 hr.(better colour)
whilst waiting dissolve the sugar in the water in a heavy pan over a low heat. bring to the boil and cook for 5 mins. add glucose and remove from the heat. allow to cool.
blitz the frozen apple and gradually add the now cold syrup until it forms a puree.
pass through a sieve and then churn in a ice cream machine.
