Combine flour, water, oil and and salt, knead to a smooth dough, wrap in cling film and chill for 2 -3 hours. Cover a table with a kitchen towel, dust with flour on top of the towel.Set dough in the centre, dust both sides with flour and stretch dough from the centre to the end by turning the dough. Set aside, keeping dough on towel.
For the filling, to be prepared during resting time of dough
Chop the cored apple into small pieces. Combine with sugar, hazelnuts, soaked raisins, lemon peel, lemon juice, bread crumbs and cinnamon. Rest for at least 20- 30 minutes.
Lightly brush stretched dough with melted butter. Set apple mixture in centre of dough, leaving 1" margin around filling. Fold in 1"along three sides of the dough leaving one long side unfolded. Moisten all folded edges and remaining flat dough edge lightly with water. Using the towel to assist you, roll the dough towards the unfolded edge, enclosing the filling. Press gently but firmly on bottom seal and sides to seal.
Using a towel as a sling, transfer strudel seam side down to a cookie sheet, gently remove towel. Brush lightly with melted butter. Bake for about 30 minutes at 180C , until golden brown.
Cill down the strudel for inimum 30 mins. Cut into pieceand serve lukewarm with vanilla ice cream or custard sauce.
