NB: use an oven safe pan
Firstly peel apples, remove core and cut into quarters.
Using an oven safe pan, caramelise the sugar using the butter and a bit of water if neccesary.
Break up the cinnamon sticks and add them into the caramel mixture. (You can use cinnamon powder as a replacement)
Cut the vanilla pod open and add that to the caramel mixture. (You can use vanilla essence as replacement)
Take the pan off the heat, pack in the apples tightly and let it cool.
Once cooled, roll out puff pastry and place it over the pan, almost as a lid.
Place the pan in a pre heated oven at 180 degrees for 20 minutes until the pastry is golden brown and crispy.
Turn out onto a plate and serve with cream or ice cream.
