This recipe came from my husband's Aunt Pat. She's an excellent cook and her recipes are definitely to be trusted.
Mix 4 cups of finely diced apple pieces with 2 cups sugar and 1 cup chopped walnuts. Let stand for one hour.
Sift three cups of flour with 1/2 teaspoon each cinnamon, nutmeg and salt and two teaspoons baking soda.
Beat two eggs lightly with 1 teaspoon vanilla . Add to apple mixture.
Add flour mixture to apple mixture alternately with 1 cup cooking oil, not olive oil. Mix by hand only till blended.
Pour into crease and floured baking container(s). If you use a 10" tube pan, baking time will be about 1 hour 15 minutes. If using smaller pans, round, square or loaf, baking time will be about 40-50 minutes. Check for doneness in standard fashion after baking at 350-degrees.
Note: If using standard size loaf pans, split dough in half. Makes 2 samll loaves, or 2 good size "cakes" in 8" square pans. Easily cuts in half. Also freezes well.
Also makes 6 mini-loaves. (the aluminum pans that are sold in supermarkets in pkgs. of 10 to a bag)
Sauce; 1/2 cup brown sugar, 1/4 cup butter and 1/4 cup heavy cream. Combine, bring to a rolling boil and cook for an additional 1-2 minutes while stirring.
The apple loaf is good at room temperature as a breakfast or lunch loaf--also very good warmed--without the sauce. I only serve it with the sauce if it is dessert. But---if you serve the apple loaf warmed and pour the warm sauce over it---then it is like dying and going to heaven.
