As apples are cut add them to a quart of water with citric acid. Let them sit for @ 5-10 minutes. Rinse with clean water then fill crockpot with apples. Add sugar, cinnamon, and water. Cook on high for 1-3 hours (Depending if you want chunky or smooth applesauce).
Add cornstarch if too watery.
