Recipe from the recent Penzey's spice catalog. (original of Mary Jo Nesser).
Preheat oven to 350 degrees F.
Grease the bottom and sides of a regular or fluted tube pan and set aside.
In a medium bowl, stir together the flour, baking soda, baking powder, cinnamon, nutmeg, cloves and salt. Set aside.
In a large mixing bowl, cream the butter and sugar until light and fluffy. Add the eggs one at a time and continue beating. In 1/2 cupfuls gradually add the flour mixture and the applesauce (alternately), starting and ending with the flour mixture. Add the vanilla extract and mix briefly.
Fold in the walnuts, raisins, and cherries. (the author used a mix of red and green cherries for color, but you don't need to).
Pour the batter into the pan and smooth with a spatula to make it level. Bake at 350 degrees F for 70 minutes or until a toothpick comes out clean.
Cool the cake for 10 minutes and the turn out onto a wire rack to cool completely.
For the glaze: Combine the sugar and milk in a small bowl.Stir until smooth and creamy. Drizzle over the cooled cake.
Mine seemed to go from wet toothpick to dry in a matter of a minute so keep an eye on it. I made it the first time and got rave reviews from my dinner party guests!
