In a bowl, combine bananas, vanilla, brown sugar and salt and stir evenly. Next, stir in the apricots and walnuts. Finally, stir in the oats.
Press the mixture evenly into the bottom of the dish. Bake for 30 minutes or until the edges are golden brown. Remove from the baking dish and set on a rack to cool, then cut into 9 equal pieces.
