Suggest a better descriptionFirst make the marinade. Heat the oil in a frying pan over a medium heat. Add the onions and cook gently for 10 minutes or until browned. Add the garlic, curry powder, garam masala and cayenne pepper, and continue frying for 30 seconds. Stir in the sugar. salt, pepper, vinegar, apricot jam and half the water. Simmer, stirring for 2-3 minutes or until the marinade thickens. Remove from the heat and leave to cool completely
