Suggest a better descriptionPut the chicken , sesame oil , sugar , soy sauce , salt and chilli sauce , if using , into a bowl and mix together well. Set aside and leave to marinate for 1 hour.
Wash and wipe dry the pandanus leaves.
Make the Light Soy Sauce with Sesame Oil by stirring together the soy sauce , sugar and oil in a small bowl. To give the sesame seeds extra punch , toast them in a dry wok or frying pan over a low heat just until they turn golden brown. Immediately tip them out of the pan , then add them to the other ingredients and set aside.
Wrap each chicken piece in a piece of pandanus leaf , making a triangle shape. Secure the parcel closed with a wooden cocktail stick and set aside while you continue making parcels until all the pieces of chicken are used.
Heat enough oil for deep-frying in a wok over a high heat until it reaches 1800 C/ 3500 F , or until a cube of bread browns in 30 seconds. Working in batches , if necessary , fry the chicken parcels , turning them often , for about 4 minutes until they float to the surface and the juices run clear when you cut into one. Use a wire spoon or tongs to remove them from the oil and drain them well on kitchen paper. Continue until all the chicken parcels are fried.
You can serve the chicken with or without the leaf wrapping with the Light Soy Sauce with Sesame Oil for dipping. The leaves can be chewy so you might want to remove them. As the sweet aroma from the leaf transfers to the chicken while it is being cooked , it is not necessary to eat the leaf.
