Leve o arroz a cozer na água com uma pitada de sal
Quando o arroz tiver absorvido a água, junte o leite e uma casca de limão.
Deixe acabar de cozer o arroz e junte então o açúcar.
Mexa bem e deixe ferver uns minutos.
Bata as três gemas de ovos com um pouco do leite da preparação e, fora do lume, adicine esta mistura ao arroz no tacho.
Mexa cuidadosamente para não talhar e, se necessário, leve novamente ao lume para cozer as gemas.
Deite em pratinhos, ou numa travessa, deixe amornar e decore com canela.
