This white sauce can be made with whatever you have in your cupboard. Easily adapts to any budget.
In a medium saucepan heat the butter until it''s bubbling. Add the flour, salt and dry mustard while stirring to prevent lumps. Continue to stir and turn the heat down to med/low. When the mixture is slightly browned add a small amount of milk, stirring the entire time to prevent lumps. When the sauce has absorbed the milk add some more, again stirring the whole time. Each addition is about a 1/4 cup at a time. You may use a little more than two cups of milk. After each additon stir until thickened.
After you''ve added all the milk and the sauce has thickened you may add cheese (2 cups shredded cheddar) which gives you a great cheese sauce for veggies. You can also add a can of salmon, boneless and cleaned of course...GRIN and have creamed salmon on toast. Or peas, you get the idea.
If you want to thin it a bit, add sauted onions and garlic, pasta, veggies and a meat of some sort you have a nice casserole.
Use your imagination.
The recipe shows the technique but the ingredients used are up to you. Basically you need an oil, butter, olive oil, bacon or beef drippings, etc. If you want to add onions, or garlic add them to the oil while it's heating up to saute. Once you add the flour there isn't time. Again, instead of using milk you can use broth or whatever.
This basic sauce, similar to a roux, has provided my family with tasty meals when the cupboards were very bare.
