Vinaigrette...whisk all ingredients together until emulsified.
Salad. Combine mushrooms, artichoke hearts, hearts of palm, carrots, and 3/4 c vinaigrette. Let stand for 1 hour
To serve.. Line plate with reserved artichoke leaves, mound lettuce, top with marinated veggie mix. Garnish with tomatoes
