Chicken Rice Side Salad with Artichoke Hearts, Pimento Olives and Curry
Prepare Chicken Rice according to box, set aside to cool or in fridge.
Slice Artichoke hearts, olives and green onions
Add to cooled rice
In separate bowl, whisk together mayonnaise, marinade juice and curry powder.
Mix together all ingredients in large bowl, chill and serve.
Taste dressing after mixing. There should be slight curry taste but not overwhelming. Adjust amount of dressing to rice mixture to your liking.
