Artichokes cooked in pressure cooker with Amazing dipping sause
Cut artichokes into quarters. Use a sharp knife to cut out the unwanted hairs in center, leaving the heart. Add water to pressure cooker and lay artichoke quarters in cooker. Season with salt and pepper and some sesame oil. Secure lid on cooker and place on high heat until cooker has a full sputter. Cook for 10 minutes, reduce flame but keep a full sputter of cooker. Make sauce by whisking mayo, oil, worcester, salt and pepper together. When cooker is done reduce pressure safely and remove artichokes with slotted spoon. They are fragile be careful. Add a dollop of sauce to each plate and serve.
