Warm the water slightly (below 100 degrees F). Add yeast and salt to water. Mix in the flour- kneading is unnecessary. Allow to rise: cover loosely with plastic wrap (not towels). Leave at room temperature until it begins to collapse (about 2 hours) then refrigerate for up to 14 days.
When you want to bake, don't knead, just "cloak" and quickly shape a loaf. Set on a pizza peel or dutch oven. Let it rest for about 40 minutes while preheating the oven to 450 degrees. Dust the top of the loaf with flower and cut a 1/2 inch deep cross or other pattern. Bake 30-35 minutes (if using a dutch oven, 25 mins covered, then 10 uncovered). Allow to cool.
