Stir walnuts, maple syrup and salt over medium heat until walnuts are coated with crystallized maple syrup.
Whisk together olive oil, vinegar, honey, salt and hot sauce. Add grapes, onion, and arugula. Toss thoroughly. Top with candied walnuts.
